These high-protein, no-bake cookie dough bites that are delicious and nutritious!

Ingredients:
2 cups low-fat cottage cheese
2 teaspoons vanilla extract
Ā¼ cup maple syrup
2 cups oat flour (or rolled oats)
2 tablespoons unsalted peanut butter
Pinch of salt
Ā½ cup vanilla protein powder
1 cup dark chocolate chips
Instructions:
In a blender or food processor, blend the cottage cheese, vanilla extract, maple syrup, peanut butter, and salt until smooth.
Transfer the mixture to a mixing bowl and stir in the oat flour and protein powder until well combined.
Fold in the dark chocolate chips.
Scoop the dough into one-tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
Freeze the cookie dough bites for at least 30 minutes.
Once frozen, store the bites in an airtight container in the freezer. Defrost for 10 minutes before eating.
